Carbon Dioxide is a powerful gas used in the food and beverage industry. It has a slightly pungent smell and it is an unwelcome visitor in our drinks. They go flat because the COâ‚‚ escapes. The bubbles you see are the COâ‚‚ escaping from the water. To make water accept COâ‚‚ it takes pressure and temperature and, in some cases, time. But for most, getting COâ‚‚ into water is called saturation and it is a science in itself. Once in the water, the result is Carbonic Acid and it is that, the acid, that gives the tingle on your tongue, not necessarily the bubbles.
