FOOD PREPARATION SELTZER RECIPES

Recipe Name: Mimosa Mold - EXCELLENT!

Servings: 12

Ingredients
1 1/2 cups boiling water
1 (6-oz.) package sparkling white grape or wild berry flavor gelatin
2 cups seltzer or club soda, cold
1 (11-oz.) can Mandarin orange segments, drained
1 cup strawberries, hulled and sliced

Directions
In a large bowl, pour boiling water into gelatin and stir for at least 2 minutes until completely dissolved. Stir in cold seltzer. Refrigerate 1 1/2 hours or until
thickened. Stir in oranges and strawberries. Pour into 6-cup mold. Refrigerate 4 hours or until firm. Unmold on lettuce-lined platter. Garnish with edible fresh flowers. Store any leftover gelatin mold in refrigerator.

Cooking Tips
Unmolding: Dip mold in warm water for about 15 seconds. Gently pull gelatin from around edges with moist fingers. Place moistened serving plate on top of mold. Invert mold and plate; holding mold and plate together, shake slightly to loosen. Gently remove mold and center gelatin on plate.

Recipe Name: Carrots New England with a twist!

Boil one pound of frozen whole baby carrots in one quart of seltzer water. Cook them until they are al dente. Strain them and set aside.

In a sauce pan, combine one stick of butter and one quarter cup of maple syrup and one tablespoon of Pernod (Anisette can be substituted). Cook on medium heat until the mixture starts to boil and all the alcohol has been cooked out of the Pernod.

Quickly add the cooked carrots and cook the mixture with the baby carrots until the mixture comes to a boil once again. Then serve.

Cooking the carrots in the seltzer water gives them an unusual crispiness and both the flavor and orange color are enhanced. This is a very delicious method for preparing carrots. You can even substitute turnips or parsnips in place of the carrots.
